Baked Brie with Cherries

Hi Everyone,

How are you on this lovely Tuesday?  I’m just happy that it’s finally cooling off outside, which means I can bake again!  Woohoo!!  Speaking of baking I have a treat for you!!

I made a fabulous baked Brie and topped it with my Cherry Quick Jam.  I got inspired to make this recipe from daelia’s Biscuits for Cheese.  They were kind enough to ask me if I wanted to try out their biscuits, and if you are a frequent reader of Peanut Butter and Peppers, you know I love crackers, crisps and biscuits!  There was no way I could turn down the opportunity to try their biscuits, especially ones that contain nuts and are all natural.


Since their biscuits are unique in flavors, such as Almond Raisin, Hazelnut Fig and Pumpkin Seed, I needed to come up with a cheese that would complement the flavor of the crackers and I automatically thought of baked brie with cherries.  This to me was a perfect match!  It’s pleasing to the eye and to the palate!!

One thing that is nice about the Brie Cheese, is that the lite version is only 70 calories an ounce.  So you can have a little and it’s guilt-free.  Also this Baked Brie is so simple to make, looks elegant and is a great way to use seasonal fruit such as cherries!  However you can use any kind of fruit jam you like.  I have had baked brie with raspberry jam and that tastes wonderful too, but I really like the cherries the best!

For baking the cheese, I made a little shallow bowl out of aluminium foil and placed the cheese in it, topped it with the Cherry Jam and baked it for 15 minutes.  I’ll be honest, I probably could have baked it a pinch longer to make it more bubbly, but I was hungry and was too excited to wait for it, so I took it out a few minutes sooner than I planned, not to mention it was pretty hot out and I couldn’t wait to turn the oven off.  I’m making a lot of excuses here, aren’t I?

I have to say I really love the crackers!  I like how crispy they are, there full of nuts and high in fiber.  My favorite biscuits are the Almond Raisin.  I ate a pack of them in one day!   I should have savored them, but they are so good!  One of my favorite combos in general is almonds and raisins.  I know these crackers are meant for cheese, but I’ll be honest with you, they taste awesome dipped in peanut butter and that’s how I ate most of them!!  It’s one of those treats that you tell yourself that you will just eat one, next thing you know you ate half a jar of peanut butter and all the crackers!  I can’t help it, I’m weak!!

Baked Brie with Cherry Jam

A soft baked cheese topped with fresh cherry jam.
Serves: 8 servings
Ingredients
  • 8 oz Lite Brie Cheese
  • ½ cup cherry quick jam or cherry preserves
  • 1 tsp. maple syrup (optional)
Instructions
  1. Preheat oven 350
  2. Line a baking sheet with parchment or use a pie dish sprayed with cooking spray.
  3. Cut off the rind on top of the cheese, but leave the sides and bottom intact. If you do not have any rind on the sides, make a shallow bowl out of aluminum foil, spray with cooking spray and place the cheese in it.
  4. Mix maple syrup with cherry jam and spread on top of cheese
  5. Bake in oven for 10 - 15 minutes, until cheese is soften and bubbly
