Hi Everyone,
Today I am part of the Mom’s Crazy Cooking Challenge! This month, what we had to do is find a smoothie recipe from another blog, make it and share it. Easy right? Not for me! I saw so many recipes that I wanted to make, but I couldn’t narrow it down. Than when I decided on what I wanted to make, I was out of milk! I hate when that happens!! Arrr! I had to search again!! So with much searching I found the Pina Colada Green Monster Smoothie by Elise’s Kitchen.
I thought this smoothie was perfect!! It has coconut milk, frozen pineapple, frozen banana and some spinach! Yes spinach!! The reason I made this smoothie was because I never had spinach in a smoothie. I hear that you can’t taste it. Well I thought, I’ll be the judge of that!! Sure enough I whipped everything together and bam no spinach taste. I got more vitamins and minerals and no extra taste. Now I see why everyone makes green monster smoothies. You should try it, it’s not that scary!!
This smoothie is creamy, only a slight hint of banana and a blast of pineapple and I can’t forget my favorite part, the coconut milk! I really enjoyed this smoothie! What a healthy treat!! Perfect for an afternoon snack!
This recipes makes about 2 1/4 cups, so I drank one cup and put the rest in a freezer bag for another time. It’s nice to freeze your smoothies so can just grab, blend and drink! Talk about a time saver!
Tell me, have you ever had a Green Monster Smoothie? If so what kinds do you like best? These kind of smoothies are new to me, so I would love some great recipes to try out!
- 2 cups unsweetened coconut milk
- 1 small banana, frozen
- ¾ cup pineapple, frozen
- 1 handful of spinach
- ½ tsp. stevia
- Place all ingredients in a blender and process until smooth!

Oh smoothie by the pool, that is calling my name. And yes I too love to sneak in spinach. I have vowed to make smoothies once a day all summer long, breakfast or a dinner substitute on hot summer days and I can’t wait to try ALL of the Crazy Cooking Challenge recipes from this month. I love Pina Colada anything too, but if you check out my recipes, you’ll see that. Try it with or without the spinach, it’s so good!! If your feeling naughty, add rum! 😉

I have never had a green monster smoothie. I love spinach, but never thought about drinking it! I will try it after reading your post.
Oh you have to try it!! I was skeptical of it, but it works great and makes it a pretty color!!
My favorite is the basic version of this – spinach, skim milk and/or yogurt (depending on consistency preferences), frozen banana (cut in chunks), 1-2 tablespoons peanut butter, 1/4-1/2 cup oats. I sometimes add a little ice as well. Love it for breakfast!
You sold me on adding peanut butter!! I have to try it with oats that sounds thick and so good! Perfect for breakfast!!

I used coconut milk for the first time a couple weeks ago (made a pineapple/strawberry smoothie with it – amazing!). I can’t wait to try this recipe that you’ve posted! I normally put spinach in any smoothie I make (and sometimes ground flaxseed)…best part is my kids help and don’t even care that there is spinach in them. My kids are almost 4 and just turned 5 – the three of us LOVE smoothies (hubby drinks them sometimes, but not super crazy about them like me and the kids). Some of our favorites are strawberry/banana/spinach/coconut/pineapple; blueberry/banana/peach; peanut butter/banana/honey/oatmeal.

All your smoothies sound so good!!! That is wonderful that you have the kids help you make them! I think that is just great!! My family sees healthy or spinach in a smoothie they run the other way! lol Good way for me to get rid of them. Just kidding, well… Going to check out the site your recommended!!

I love green smoothies these days! Spinach is such a strong veggie when eaten steamed but in smoothies you barely taste it and are able to get in your veggies! Love it 🙂 Your smoothie by the pool looks so relaxing 🙂
This looks great! I’m a huge smoothie addict and have at least one per day. And spinach is amazing. I’m up to around 2 cups and I still can’t taste it. So filling!

It’s wonderful! I placed it in a zip lock bag, threw in the freezer, took it to work and placed in the fridge and after about 4 hours it was slushy and perfect. Great drink to take to work!

You are right this smoothie looks perfect. I was looking at the crazy cooking challenge smoothies which has spinach and the best thing I liked about this says in its name.
I am loving the spinach smoothies, there do good and good for you. There were a lot of great recipes posted in the Cooking Challenge. I can’t wait to try a few of them out!!
I love green smoothies, my favorite is banana, peanutbutter, almond milk, and spinach with some honey. Its so good. Sometimes ill even add oats to make it as a meal replacement. Hmmmm
