Hello,
Sheesh, my post title is a mouth full!! It has been hot here, temperatures have been in the 90’s and man does it drain you! With all the heat we have had, I haven’t wanted to cook, so you may notice my recipes this week, are light and simple and requires not much baking time, if any. When it’s hot out, I prefer to snack on cool treats rather than eating a heavy meal.
So cool treats you wonder? Today’s treat is something on found on Greenlean blog. Kate the owner of the Greenlean blog posted a comment on my blog and invited me to visit hers, so you know I had to check her out. I love her blog! What I saw and loved were her frozen yogurt covered strawberries. I took that idea and ran with it!!
These snacks are like my yogurt parfaits that I make, just all in one little package and frozen. They taste best about a 30 minutes after you make them, but I kept some spares in the freezer and had a few when I got home from work. Their such a healthy, tasty little snack!
I sandwiched the banana with strawberry and stuck them together with peanut butter and then smeared yogurt on them and sprinkled the bottom in some granola. Adding the granola is optional, you really don’t taste it, but you do the other goodies on this sandwich!
I used toothpicks for holding the banana sandwich together, which makes it easier to smear the banana with yogurt. However I ran out of toothpicks and I had to use a corn on the cob holder. I thought you would get a kick out of that! If you weren’t my friends, I would be to embarrassed to show you. 🙂
- 1 Banana, sliced ¼" thick pieces
- 1 extra large strawberry, sliced
- 1 heaping tsp. Almond Butter or other nut butter
- ¼ cup greek yogurt, plain
- 1 Tbsp. granola (optional)
- 9 toothpicks
- Slice banana's into pieces, make sure you have an even amount to make your sandwiches. Equally smear peanut butter on to one side of half of your cut bananas. Add 1 piece of sliced strawberry onto peanut butter. Top other banana piece onto strawberry.
- Place toothpick into center of banana to hold it together. With a knife or spoon, smear the yogurt onto the banana, than sprinkle with granola.
- Place into freezer for 30 to 60 minutes.
I recommend using a firm banana, and the amount of sandwiches you get depends on how long your banana is.
Time for me to go. I have to water my garden since it’s going to be another hot one and then when I come in, I’m going to make more of these Frozen Stuffed Banana Sandwiches!!

I’m thinking your treat with the corn holder looks a bit like a squat fat bird with a red beak and a huge white shaving cream beard that covers most of the rest of his body except for some little granola feet sticking out – no, I’m not drinking, I just have a silly imagination!
