PB and P’s Breakfast Jar Parfait

Hi Everyone,

Happy Monday!  This Sunday I made a bunch of goodies that I can’t wait to share with you this week.  I thought I would start our Monday off with one of my favorite, favorite breakfasts.

This is my breakfast jar parfait!  I have been making this well over a year, and it’s probably one of my top favorite breakfasts.  I decided to make this on Sunday instead of baking or whipping up a batch of my pancakes, since it’s been pretty hot out.  We went from 60’s to 90’s over night!

This parfait is perfect for anyone on the go!!  It’s healthy, put together fast and will fill you for hours.  It also takes no time to make.  Here are my ingredients.


I make overnight oatmeal, and in the morning I put this little treat together.  It’s so quick too!  It looks like a lot, but it’s about 5 minutes to put together.  Here is my list of layers.

This is a list of the best goodies, especially the Peanut Butter part!  he he!!  When you mix it all together its creamy goodness.  The over night oatmeal is perfect!  I add chia seeds to it to thicken it up a bit, plus it gives it a little more nutritional boost.  If you never had overnight oatmeal, you should really try it.  I have also made a bunch of different kind of over night oats, like peanut butter and jelly, apples and cinnamon, pumpkin and berry medley.  The possibilities are endless!!

I also top it with granola that I picked up from a local bakery.  I would have made my own, but with the heat, I didn’t want to turn my oven on for that long.  Besides if I did, my Husband would yell at me!

You could eat this treat anywhere.  Little Jenny and I have even taken it to Starbucks and had it with our lattes.  I’m sure there not thrilled about it, but they never said anything!  You could eat this on the subway, at the gym, in the sun or anywhere your heart desires.  I just seal it up with my lid and pop it in my purse.  Just don’t eat it when your driving!!

Oh, you see the picture of me to your right?  That’s me from last summer, eating my breakfast parfait outside of Pete’s Coffee, just before we hit up the Farmer’s Market.  🙂

I thought it would be fun to compare my parfait with some restaurants.  This may make you change your mind about buying there’s and making mine instead!

Starbucks Strawberry Blueberry Parfait:  Calories:  300, Fat:  3.5,  Sodium:  130,  Carbs:  60,  Fiber:  3,  Sugar:  39,  Protein:  7

Panera Strawberry Granola Parfait:  Calories:  310,  Fat:  4.5,  Sodium:  100,  Carbs:  43,  Fiber:  3,  Sugar:  30,  Protein:  9

McDonalds Fruit and Yogurt Parfait:  Calories:  160,  Fat:  2,  Sodium:  70,  Carbs:  30,  Fiber:  1,  Sugar:  23,  Protein:  4

Subway Yogurt Parfait:  Calories:  160,  Fat:  2,  Sodium:  75,  Carbs:  30,  Fiber:  2,  Sugar:  24,  Protein:  6

Looking at the list it’s a toss-up between Subway and McDonalds.  Now remember none of these contain oatmeal!!!  Now look at mine!  Oh and mine makes over 2 cups!!

Serves: 2 big cups
Ingredients
  • Over Night Oatmeal:
  • ¼ cup of Old fashion Oats
  • ¼ cup Non Fat Milk
  • ¼ tsp of Vanilla Extract
  • Dash of Ground Cinnamon
  • 1 tsp. chia seeds
  • **The Add In's**
  • ½ Cup of Plain Non Fat Greek Yogurt
  • ½ cup of diced Strawberries
  • ½ Blueberries
  • ½ Tbsp of Peanut Butter
Instructions
  1. The night before make your over night Oatmeal
  2. Place oatmeal, milk, vanilla, chia seeds and cinnamon in a bowl, stir, cover and leave in the fridge over night.
  3. In the morning, layer in this order:
  4. ¼ cup of yogurt
  5. ¼ cup of strawberries
  6. ¼ cup of blueberries
  7. Oatmeal
  8. Peanut Butter
  9. ¼ cup of yogurt
  10. ¼ cup of strawberries
  11. ¼ cup of blueberries
  12. Sprinkle with granola!

Time for me to have my dinner and then write my post for Tuesday!  I’m working late and then were going to dinner to a fabulous restaurant.  I already know what I’m ordering, Grilled Salmon!  Yum!  My family doesn’t eat fish, so when I go out I always try to order a good healthy fish dish!  Do you have foods that you love but your family won’t eat?  If you’re not new here, than you know my family tends to be very picky when it comes to their food!  They prefer process and fried!  Not me, I try to stick to healthy!!
