Hi Everyone!
Today was so beautiful here in Northern California that my friend and I finally got to take a walk to the Farmers Market on our lunch. Not too much in season, but I did manage to pick up a great big bag of kiwi’s, I can’t wait for them to ripen so I can just peel and eat them. I think kiwi is one of those forgotten fruit. I also picked up a bag of carrots and made the best roasted carrots I have ever had.
Since it was so nice out I was inspired to heat up the grill and I made Bourbon BBQ Boneless Pork Chops.
Remember when I made Bourbon BBQ Sauce? I used the same recipe and made these babies! I really love that barbecue sauce, it’s fantastic. Here’s the link for the recipe encase you missed it. I used Boneless Pork Loin that I bought from where else? Trader Joe’s and I added about 2 tablespoons of BBQ sauce to each pork chop. Placed on the grill and cooked for about 5 minutes each side. That’s it, eazy peazy!
While they were grilling I also made Honey Glazed Roasted Carrots.
These carrots were cooked to perfection! They are sweet but not to sweet and a little savory from the pepper and salt. I am normally not one who cares for cooked carrots, but after this recipe, I changed my mind.
I peeled and cut the carrots to the same size, placed in a bowl and added melted butter and honey, baked in the oven for 15 minutes and they were done. How quick is that. My dinner took me about 20 minutes with prep and cooking. As an additional side I took my homemade whole wheat bread, sprayed with butter and added just a little bit of garlic powder on them and threw them on the grill too. Wow, I feel like Martha Stewart. lol I have to say I have a new love for cooking! It’s so much fun to create, but even better to eat! 🙂
- 4 carrots, peeled
- 1 tbsp butter, melted (I used Brumble & Brown)
- 1 tbsp honey (I used organic raw honey)
- ¼ tsp salt
- ¼ tsp pepper, ground
- preheat oven to 425
- Line a baking sheet with aluminium foil and spray with cooking spray. Set aside.
- Peel your carrots, and slice into thirds and slice again vertical. You want the carrots to be the same size.
- In a small bowl whisk together butter and honey and pour over carrots. Season with salt and pepper.
- Place on baking sheet and roast for 15 - 20 minutes or until carrots are tender.
