Strawberry & Banana Pancakes

Howdy Folks!

So, so, so happy that it s finally Friday!!  You don’t even know it!  I was good at the beginning of the week, but the weather has got me feeling blue and depressed.  I was wondering why I feel like this and I think it’s the gray skies.  I have no patience, I’m cranky, hard on myself and tired, it’s just gotta just be the weather or it’s simply just me (Eck!).  Well, at least they said the rain is suppose to stop tonight, no rain on Saturday!  Yah!  I guess I shouldn’t complain, since we haven’t had hardly any rain this winter, and so many other people have it way worse then California!  So I’m moaning and groaning over nothing.  Sorry for the rambling, thank you for listening to me.  Now let’s get to something way better then my mood!  How about a nice fluffy pancakes to start the weekend off right!!!

These are my newest creation.  Strawberry Banana Stuffed Pancakes with warmed banana and strawberry topping.  I am very pleased with these pancakes.    There so good, ohhh weee!  I am thinking of making them again this weekend!!


My Husband who never eats breakfast has been having my pancakes for the past 3 weekends.  I’m surprise he likes them since there made with whole wheat and yogurt.  He’s not a healthy eater but he gobbles up these pancakes before I can even finish taking photo’s of mine.

Strawberry Banana Pancakes

Ingredients:

1/3-cup Non-fat Greek Yogurt

2 Egg Whites

1/2 Ripe Banana, mashed (about 1/4 cup)

1/2-tsp Vanilla Extract

1/2-tsp Baking Soda

1/3-cup Whole-Wheat Pastry Flour

1/2 tsp Sugar

Dash of Salt

5 Strawberries, fresh, diced

Sauce:

1/2 Banana,mashed (about 1/4 cup)

5 Strawberries, frozen is best, but fresh will work

1 tsp. Sugar

Directions:

Mix together the Greek Yogurt, 1/4 cup banana, Egg Whites & Vanilla Extract into a small bowl.

In a separate bowl combine Flour, Baking Soda, Sugar, & Salt

Combine and whisk till evenly mixed

Fold in fresh strawberries

Place 1/4-cup batter onto non-stick skillet and cook till bubbles start appearing through the top of the pancake and then flip. NOTE: Cook on medium heat and I flattened out my batter with the spatula to cook more evenly.

About 2 minutes on each side

For sauce:

Add 1/4 cup mashed banana, 5 frozen strawberries and 1 teaspoon of sugar in a sauce pan (if you use fresh strawberries, add 1 Tbsp. of water to the sauce pan). Cook on low, stirring frequently until thicken about 5 – 7 minutes.

Evenly divide sauce over top of pancakes

Makes 2 servings – 4 pancakes each

Calorie per serving (4 pancakes total):  199,  Fat:  .09,  Cholesterol:  0,  Sodium:  382,  Carbs:  38,  Fiber:  5.4,  Sugar:  13,  Protein:  11.5

I love that I can eat 4 pancakes with topping for under 200 calories.  Syrup and whip cream not included in calories

Look how thick and fluffy they are.  If you haven’t already, you must try these pancakes.  You will love them!!!  In the summer I plain on making these but using banana and strawberry soft serve as my toppings.  Oh, I can’t wait!!

What I like about these pancakes besides that it feels like I’m eating dessert for breakfast, is that they fill me up for hours!

Well this past week for cooking has been flops for me.  I made pork tenderloin, but it wasn’t cooked all the way, so I messed that one up.  I made chocolate donuts and they weren’t great and tonight I made the most awesome meatloaf but the photos didn’t turn out like I wanted them to.  For some reason when I take pictures they look rounded, so nothing is sitting flat.  I bought the book Plate to Pixel, so I plan on reading that after I type my blog.  I don’t understand what I’m doing wrong, but practice makes perfect.  All that means is I can make my recipe again and this time make them even better!!!  So I’m up for the challenge.

    Oh…and to answer your question. I never ever have a problem with coming up with recipes…I have many in my drafts that I’ve simply not gotten to, and I’m pretty chatty, so typing the posts seem to take longer than they probably should, BUT the picture taking is definitely the worstest thing for me. I need a new camera and I need better lighting. I NEED HELP BIG TIME! =( I think your photos are just lovely! Keep up the good work.

      Funny, I only started making pancakes this past summer and I love them, I can’t get enough! I think it’s because it’s my creative outlet and I challenge myself to come up with a different pancakes recipe every week.

    I made these last weekend & they were ohhhh soooo good!! I used strawberry-banana Greek yogurt, and all I could find at my grocery store was white whole wheat flour but they were still delicious & had great texture. I skipped the syrup & doubled the topping, which was amazing…..I could easily see myself enjoying that on some froyo 🙂

My patio area is kind  of an awkward space because we used to have a large pool that we took out a few years ago. We built our space around the pool. So we have lots of odd corners, but it works for us. I really like my backyard.

I went with light cool colors for my backyard space because of the heat and sun. I have always loved the coastal look. I do love to add a pop of color with flowers. Give me all the flowers! 

I hope you check out everyone’s outdoor space. I love this time of year and I can always use more outdoor inspiration.

Happy Wednesday! My friend Kelly @farmtotablecreat Happy Wednesday! My friend Kelly @farmtotablecreations made a gorgeous DIY Tabletop Firepit and I had to run out and got all the pieces to make one of my own. Kelly’s is so gorgeous and fun. Perfect for evenings outside.

However, when I started to make mine I realized that my dogs are to interested in it, as you can see from the video. I was afraid they would try to get close to the fire and burn themselves. So I came up with another idea, where I could get the same effect without the fire.

A couple weeks ago my friend Claire @huntersridge_designs shared some solar candles that I thought were pretty, and would be great to use on my table. I’m a sucker for anything solar. 😂 So of course I ordered some. I decided to use the solar candles in my pot in place of the tiki fire. I think it turned out great. I just need to add a few more rocks to it, which I’ll get this weekend.

Happy Wednesday! I have spent so much time working Happy Wednesday! I have spent so much time working outside that I have not worked on decorating my dining room for Mother’s Day or Spring. It’s a bare slate as of right now. So I thought I would share with you last years tablescape that I did for Mother’s Day.

This Mother’s Day,(Saturday) little Jenny is taking me to the @gratoncasino to get a pedicure and possibly lounge at the pool, if it is warm enough outside. Then we will go for a nice lunch. I can’t wait. Sunday, I’ll spend Mother’s Day with the boys. 🐶🐶

Happy Monday! I’ve had a semi-productive weekend Happy Monday! I’ve had a semi-productive weekend in between the rain and cold. It was pretty chilly to me. I did get some plants planted and my husband added a new drip line in my big garden. Hopefully my flowers will thrive better this year.

On Friday, I watched 3 episodes of Firefly Lane on Netflix. If you like girl type series, I highly recommend. It’s so well written. It’s about best friends growing older together. Unfortunately this is the last of the series. I’ll miss it. I also read that Yellowstone will come back in November and that will be the end of the series. I’ll miss that show. At least I have Virgin River to look forward too. My husband likes Virgin River too.

Anyway, here is a view of my clean kitchen. I put together this little vignette for Mother’s Day inspiration. I love the Italian Soda from Trader Joe’s, but boy does it give me bad heartburn. I always just drink a little. Actually, anything sparkling, except regular soda, gives me heartburn. So strange.

Happy Saturday! Wow I haven’t shared on a Saturd Happy Saturday! Wow I haven’t shared on a Saturday in forever. Today we are getting rain again. Last week it was 90 and sunny and now back to the 60’s, but we are going to hit 90 by next weekend. I can’t wait. I’m over this wacky weather we are having.

I took down my Easter decor a few weeks ago and went back to using blues and greens in the living room. I think the colors look fresh and clean. Once the weather gets nicer, I’ll start to add in some yellows. I love yellow for the summer.

Happy Monday! This weekend I was finally able to g Happy Monday! This weekend I was finally able to get outside and work on my patio space, but unfortunately I don’t think I’ll be able to enjoy it this week. We are back to winter temps, high winds and rain. They are calling it “May Gray”. Such weird weather this year.

I was able to put out my new rug that you all helped me to pick out. I just love the blue. I decided to go with blues and yellows for my outdoor space. I think the yellow brightens up the space. I just need to get more flowers because after all you can never have too many flowers.

I wanted to also share with you my new side table from @vicllax_outdoor. I love the white color. It really helps to brighten this space. The table is made of metal, comes in 4 colors and is easy to put together. This table is perfect for a small space too. I couldn’t be happier.

Happy Tuesday! This weekend we had amazing weather Happy Tuesday! This weekend we had amazing weather. Sunny, light breeze and in the 70’s. I did a lot of yard clean-up. I just need some dirt and my raised beds will be ready for planting.

I planned on working on the patio area, but time just went to fast. My husband repaired the trellis that fell over from the wind. We had the Morning Glory on it, but we got rid of it because it is highly toxic to dogs. I ordered a climbing rose from Heirloom Roses that will be delivered next week.

I’m sharing with you the Beverage Tub that I bought from Target that I am using as a planter. My husband drilled 1/4” holes 4” apart on the metal insert.  I added a pot to the tub to give the flowers a lift. The handles on the tub are not bendable and I didn’t want to break the flowers and I wanted it to be easier to lift the flowers out, if I decide to change the flowers.

I love the look! Once I work on the patio area, I’ll move the table and flowers to the patio area. So excited to be working outside. Have a beautiful day!

Happy Wednesday! I am sharing with you my garden f Happy Wednesday! I am sharing with you my garden from last year. I’m gearing myself up to start working in the garden this weekend. It’s supposed to be mid 70’s. So if all goes planned you will be seeing quite a few gardening posts.

Last years extreme summer heat took a major toll on my garden. I lost quite a few plants. 😫 For some reason I lost my Butterfly Bush. I plan on adding another one in the same spot. A lot of my lower flowers like Hummingbird Mint and my Coneflowers didn’t survive. We will be looking at the sprinkler system to make sure the plants are getting enough water.

At least this garden is mainly annuals, so it should fill up with some color soon. I’m unsure what to do with my other gardens as my dogs have destroyed them. They keep on digging in the dirt. Maybe I should get them a sandbox to play in?
