White Chocolate Raspberry Brie Cups

Hi Everyone,

Today I have a lot of things happening, quite a busy Wednesday I had!  Went to the dentist, had 30 minutes of laughing gas, and they realized my insurance is tapped out for the year, so I have to go back next week!  Hey, at least it got me up early and I got free laughing gas!  I was a little giggly!  he he  After that I went to Whole Foods walking around aimlessly, not know what to buy, I just knew I wanted stuff!  So goofy I know.

I started blogging this year so I could share my recipes and creations with my friends and family.  As the months have gone on, I have really enjoyed blogging.  I also found a new love for cooking.  I love trying new things, revamping the old and creating new and fun dishes, and I always try to keep them healthy.  Try is the main word!  So with that I am truly honored to receive this reward.

Today’s recipe is part of the Holiday Recipe Club Blog Hop.  For this round all participants were required to use either Wines (red, white, sparkling – anything goes!), white chocolate, and mascarpone.”

Well you know me, I went for the Chocolate.  I made a wonderful White Chocolate Raspberry and Brie Cups.

These little treat are so easy to make and the flavors with the salty brie and the white chocolate really make these little tarts pop!  I simply love them, perfect for a New Years party!

I want to thank Erin from Big Fat Baker a BIG special “thank you” for taking the time and effort to put this blog hop together.  It makes me think of new creations and makes it so fun to create new recipes.

White Chocolate Raspberry Brie Cups – Adapted from Athens


15 Athens mini phyllo shells

1.5 oz chopped white chocolate (I shaved mine with a vegetable peeler)

1.5 oz Brie, chopped (I used Lite Brie Cheese)

1/4 cup raspberry preserves

15 raspberries


Preheat oven to 350 degrees.

Line a baking sheet with parchment paper

Place 1 teaspoon white chocolate in bottom of shell. Top with chopped Brie. Add about 1 tsp. raspberry preserves on top and bake for 8 minutes.

Remove from oven and top with a left over raspberry jam, place back in oven for 1 minute. Top with a raspberry. Serve hot.

Calories per cup:  32,  Fat:  1.4,  Cholesterol:  1.5,  Sodium:  24,  Carbs:  4.3,  Fiber:  .01,  Sugar:  3.8,  Protein:  .07

What I really love about these appetizers is that you don’t have to melt the chocolate.  Just shave the chocolate with a vegetable peeler and place on the bottom.  Makes it so easy.  I am just not good at melting chocolate, I tend to make a mess.  🙂  Now go enjoy some White Chocolate Raspberry Brie Cups with your favorite bubbly!
