Today I have a dentist appointment, yuck! Not sure what it’s for, I think it’s to be fit for a crown and to decided on when to pull my wisdom teeth out. Can you believe at my age I have to have my wisdom teeth out. I am NOT looking forward to that, but when it’s all done and over with, it will be all good! I just think of other procedures that people have to go through that is way worse then having my teeth pulled that it helps me think if they can do that, then I can have this done! Funny how we have to psych ourselves up over these things.
Today I am sharing with you one of my favorite salads. This is a family favorite too! It’s healthy quick and super delish!
This salad has feta cheese, though blue cheese crumbles and Gorgonzola cheese is excellent in this salad. It also has chicken, spinach leaves, almonds and of course strawberries. I saw some nice looking strawberries at the store last night and I automatically thought of this salad. I also made a fantastic, LOW calorie Strawberry Vinaigrette to go with it. The dressing takes only a couple of minutes to make.
When I made this dressing I use Napa Valley Organic Balsamic Vinegar, it has zero calories. I don’t know how that is possible. But with that, it makes this dressing 3 calories a serving! Unbelievable!!!
Strawberry Spinach Salad with Strawberry Vinagrette
Ingredients:
2 Cups fresh spinach leaves
2 oz of chicken – cooked
1/2 oz. feta cheese
1 tbsp. sliced almonds
4 strawberries – sliced
Directions:
Place everything on a plate! 🙂
Serves 1
Calories for salad without dressing: 139, Fat: 4, Sodium: 215, Potassium: 456, Carbs: 7, Fiber 3, Protein: 20
Strawberry Vinaigrette
Ingredients:
2/3 cup strawberries – chopped
1/2 shallot – chopped
1/4 cup – balsamic vinegar
1/4 cup water
2 tsp. fresh thyme
1/4 tsp. ground pepper
1 1/4 tsp. dijon mustard
Directions:
Place all ingredient in a blender and process until smooth, about 30 seconds
Makes 1 cup
Calories per Tbsp. 3, Fat: .01, Sodium: 10, Potassium: 13, Carbs: 1, Fiber: .01, Sugar: .03, Protein: .01
Whats nice about the dressing is that as it sits it thickens up quite a bit and makes for a hearty dressing.
Yesterday I worked out to Jillian Michaels No More Trouble Zones and today I did kickboxing and boy are my legs sore. I am not sure what work out made my thighs hurt but one of them did. Now it’s making me feel lazy. So much for exercise to give you energy.
As much as I don’t feel like it, I need to go and clean up the Christmas stuff. Have a great day and wish me luck at the dentist!

One thing about living in California, we have strawberries all year round. They don’t taste as flavorful as in the summer, but there still good!

Wow – that is a great salad! I really like the flavor combination! Best of luck with the dentist…I had my wisdoms removed in my 20s. Not fun, but nice to have it over with!
