November 1st hit and so did Christmas

Howdy and Happy Wednesday!

Yesterday I got a huge batch of mail and did my eyes deceive me?  I saw ads, lots of ads for Christmas!  November 1st hits and so did the Christmas advertising!  For the past week, I have gotten e-mails for Black Friday events, so far I didn’t see anything that appealed to me, but that may change.  I haven’t even gotten my Christmas list together yet!  It seems to early. Halloween just passed and we haven’t even had Thanksgiving yet!  Do you have any items you need on Black Friday?  Do you even go out on that day?  Is there a special gift you need to get?  But the big question is, are you even ready for Christmas at all???

Well my favorite thing about Christmas is this!!!

Skinny Peppermint Mocha!  Oh man! It’s so good!  New this year!!  I got it with a little less milk and a double shot of espresso, just to save calories!  This is going to be my winter addiction!  I hope they keep it all year!!  Do you like peppermint?  I absolutely love it!  So be prepared for peppermint recipes!!

So whats on the menu tonight?  I made a killer Southwest Soup in the crockpot! I love the crockpot,it’s so simple, just throw everything in and bam your done, you just have to wait!!  Here is everything in the Crockpot!

Here it is done!  So thick and so good!  It even tastes better the next day!!  The next day it really thicken up, my husband thinks it’s more like a southwest chili, but I think it’s more like soup!

Southwest Chicken Soup in Crockpot

2 – 8 oz Boneless Chicken Breasts

1 – 15 oz can of Black Beans

1/2 Cup Frozen Corn

1 – 28oz Can of Diced Tomatoes – No sodium added

2 Cups Low Sodium Chicken Broth

1- 4 oz can of Green Chili’s

1/2 Bell Pepper – Diced

1/4 tsp. Cumin

1/4 tsp. Salt

1/4 tsp.  Black Pepper

1/4 tsp.garlic Powder

2 Tbsp. Taco Seasoning

Dash of Cayenne Pepper

Few Fresh Springs of Cilantro

Directions:

Put the chicken breasts in the crockpot, add the rest of your ingredients and stir.

Put the setting to low for 8 – 10 hours or on high for 3 – 4 hours

About an hour before it’s done take two forks and shred the chicken, it’s simple the chicken will just fall apart.

When done, serve with some Lite Mexican Cheese!

Everything in this recipe is healthy!  Great filling meal!  One Cup is really filling and you have leftovers for lunch, and as I said before it tastes even better the next day!!!

So when you lack on time for dinner, pull that crockpot out!!  You’ll have a good meal waiting for you!
